Budget snacks for Summer

I don’t know about your kids but my kids are always “hungry”. So, I’ve done some research and started experimenting. I tried to choose budget summer snacks that won’t cost an arm and a leg. These snacks are filling and nutrient packed and super easy to make. 

Our family loves slushie drinks. We love to cool off without all the calories you have in smoothies. 

Easy Freezee with less calories

INGREDIENTS 

  • 2 cups of cold water
  • Roses lime or passion fruit cordial 
  • A squeeze of lemon or lime or if you choose the passion fruit, a squeeze of orange
  • Tablespoon of honey
  • 4 cups of ice

INSTRUCTIONS

  • Use a blender that can crush ice. 
  • Blend all the ingredients until smooth.
  • Pour into four glasses and serve with a straw and maybe even a spoon. 

Nutella and banana sushi

These delicious Nutella and banana fruity snacks are so easy you can prepare them for the after-school rush in five minutes. They also look cute on party platters.

INGREDIENTS

  • 2 tortillas
  • 4 tbs Nutella chocolate hazelnut spread
  • 2 bananas

INSTRUCTIONS

  • Place bread on a cutting board and spread with Nutella. 
  • Peel banana and lay in on the edge of the tortilla. 
  • Roll banana in tortilla. 
  • Slice into rounds and arrange on a plate with the cut edge facing up.

Delicious Apple Cookies

INGREDIENTS

  • 1 small apple
  • Peanut butter
  • Granola
  • Chocolate chips or flaked almonds

INSTRUCTIONS

  • Core the apple and slice horizontally to make apple circles.
  • Remove excess moisture from apple slices with a paper towel
  • Spread peanut butter evenly on the apple slice
  • Top with granola, flaked almonds or chocolate chips

Frozen Blueberry Bites

These Frozen Yogurt Blueberries are a simple, healthy snack that satisfy your sweet tooth big time.

INGREDIENTS

  • 1 cup blueberries
  • ½ cup yogurt vanilla, fruit-flavored, and/or dairy-free (smooth)
  • A few toothpicks

INSTRUCTIONS

  • Line a baking sheet or plate with parchment or wax paper. 
  • Place a berry on a toothpick and dip in the yogurt. Set on the parchment paper in a single layer, and repeat until all the berries are dipped. Freeze until solid, about 1 hour.
  • Eat immediately or transfer to an airtight container and store in the freezer.

NOTES

Instead of blueberries, you could also use grapes, quartered strawberries, or virtually any bite-sized fruit like diced mango. 

Frozen Grapes

Just buy a bunch of grapes and remove them from the stalks. Toss them in a ziplock bag and freeze. Easy as that!

What could be better than to set up your teepee or play tent outside on the lawn and joining the kids to snack and read.
